BAK KWA FRIED RICE
(recipe from Simply Her, August 2010 Issue)

INGREDIENTS
(serves 8)

4 eggs, beaten
3 tbsp vegetable oil
2 tbsp JJ chopped garlic
6 cups cooked rice
250g frozen peas
4 slices of bak kwa, diced
Salt and pepper, to taste
3 tbsp light soya sauce
4 tbsp Singlong fried shallots
Chopped spring onions, to garnish

TIP
To make a mean dish of fried rice, use overnight rice, which is drier and has grains that separate easier when fried.

DIRECTIONS
1. Pour the eggs into a heated non-stick frying pan. Scramble till they are almost cooked. Remove and set aside.
2. Heat the oil in a large wok. Stir-fry the garlic until golden for 1 min.
3. Add the rice and mix thoroughly so that the grains are cooked evenly with garlic oil.
4. Add the peas, bak kwa and scrambled eggs. Fry for 3mins, until some of the rice grains are slightly charred and all the ingredients are well-mixed.
5. Season with salt, pepper and light soya sauce. Add the fried shallots and stir for another minute.
6. Garnish with spring onions and serve.
